Description
Chorizo elaborated with a selection of pork and bacon aderezas with salt, garlic and paprika and stuffed into natural casings and subjected to the process of maturation proper.
WITHOUT DYES.
Sausage made with a mixture of pork meat and bacon from pork, chopped and mixed. This mixture is added salt, paprika and other spices and condiments; kneaded and stuffed into natural gut, that has undergone a process of maturation-drying with smoked with oak wood, that is characterized by its red coloration, and by their smell and flavor.
TEXTURE: Firm and compact to the touch.
COLOURING AND APPEARANCE TO THE COURT: Cut, smooth and well linked, without colourings abnormal and with a differentiation in net between fragments of meat and bacon.
AROMA AND TASTE: characteristic, provided mainly by the spices and condiments, next to the curing process.
THE FORM AND EXTERNAL APPEARANCE: Cylindrical shape more or less regular; of rough appearance on the outside and well attached to the gut to the mass.
