Tasting notes: BODEGAS BAIGORRI – BAIGORRI carbonic maceration TINTO 2017
- Nose: Highlights its fruity aroma of blackcurrants and blackberries.
- Mouth: Its passage in mouth is pleasant, enduring and excelling notes of licorice and pills juanola. The null astringency makes it palatable and is the most relevant characteristic that differentiates it from classic wines of carbonic maceration.
The winery.
The gravity takes on the role in our wine cellar,allowing that the grapes arrive whole to the fermentation to develop the whole process in a vertical manner, being all the movements of the grape or of wine by gravity, avoiding any kind of mechanical lift.
There is not reception hopper and does not use pumps for the transfer of the grape, nor to the return of deposits that can damage it, from ace selection tables up to the bottling throughout the different underground levels of the Winery, optimizing all phases of the process.
The new barrels of French oak are the responsible for carrying out the upbringing and give to the wines of this winery, its point well-balanced wood and fruit.
