Red wine Cruz de Alba Crianza Ribera del Duero
Development process
Fermentation in small tanks with manual punching down.
Aging in French oak barrels during 15 months following the use of "thirds": 1/3 wine in 2nd use barrels, 1/3 in 1st use barrels, 1/3 in new barrels.
After bottling the wine remains between 8 and 10 months in the bottle.
Pairing Accompany tapas and light snacks of smoked meats, beef carpaccio or soft cheeses.
The winery
All Cruz de Alba grapes come from a unique vineyard, FINCA LOS HOYALES, located in the golden mile of La Ribera del Duero. To make their wines, only the best Tempranillo grapes are used through agrohomeopathic treatments and a manual harvest following the biodynamic calendar, whereby the moon marks the days when decisions can be made about the vineyards: air corresponds to the flower; water, to the sheet; fire, to the fruit; and earth, to the roots.
According to agrohomeopathy, minimal intervention is done on the vineyards, applying only preparations of substances of plant origin, animal the mineral.
Radiosesthesia allows dialogue with vineyards and plants.
