Cortes de Muar is the second generation of artisans with more than 20 years of experience in the business, located in the Valley of the Deza (Pontevedra), zone of great farming tradition.
They have a limited production of artisan cheese, made with milk from cows on free grazing, no artificial supplements.
Name “Cortes de Muar” arises from considering the raw material as an essential element in obtaining an excellent product. Therefore, They consider cows as queens of their courts, They included in them at night after a day happy day in the grass. "Muar" is the language of Galician cows that, between "M" tell the excellencies of cheese (Poetry on the label of cheese).

Did not purchase via this vendor, but rather via local deli. It’s astonishingly good (and strong).
Strenth of. blue cheese, but the lightness of a mountain cheese. The hay maturation gives an almost smoke-like umami to the taste. Very good indeed.
