We start from a low grape production, the least productive Galician white varieties. The Caíño is a variety of long cycle and late ripening. Is the last to vintage find ourselves with a high risk of rain.

very delicate and sensitive to mold so it requires interventions like leafless or green pruning to prevent disease and achieve good and balanced grape ripening.

An important wine under Caíño is its ability to extract the most of the characteristics of the terroir where it is located.

The Caíño grape with which it is made is macerated cold for longer to take advantage of its high percentage of skin, thus promoting the extraction of aromas.

After fermentation we keep the wine on its lees for two months “battonages” newspapers. Then rest at low temperature eight months to bring it to the bottle where finessed finish.

Spring rains and mild summer temperatures caused the vines to a cycle very long with a slow, prolonged and excellent maturation.

In the case of Caiño, variety of by if late, the harvest ended on the eighth of October. The good conditions during the start of the fall allowed us to delay the move until the grapes reached their optimum moment of maturation, giving us a wine with delicate aromas of ripe, marked minerality and great complexity, showing clearly the main features of the aromatic variety as well as a depth and meatiness in the mouth that make it a wine with a lot of travel, long and very much alive.
