The swiss chard is one of the green leafy vegetables more popular today in Galicia; they are very versatile in the kitchen, being able to add young leaves to salads and when they are more mature, to dishes, cooked vegetables and sautéed.
Chard leaves contain extremely high amounts of vitamin A; provides vitamins of the B complex, as B1, B3, B5, B6, B9, that are essential for the metabolic functions cellular. Its leaves are an excellent source of antioxidant vitamins, as the vitamin C, and have excellent levels of vitamin K. In terms of the minerals, contains copper, calcium, sodium, potassium, iron, manganese and phosphorus.
This vegetable is very rich in soluble fiber, that helps to keep the intestinal transit, prevents the estrañimiento, and it is very important in the prevention of cholesterol.
